You can get more vitamin C from certain vegetables if you pick frozen over fresh. A recent study showed that frozen green beans retained nearly twice as much vitamin as fresh. That's because produce ommonly takes between seven and nine days to get to market, while commercial freezing occurs within hours of piking. Some exceptions to the rule: Fresh broccoli is higer in vitamin C than frozen, even after refrigeration. And the more fragile, leafy choices like spinach andf kale must be eaen fresh and as soon as possible to gain the highest C impact.
